Thai Food Tonight


Thai style Pineapple Fried Rice
Ingredient:

  • Three Cups of Cooked Rice ( better cook the rice a day before and place it in the fridge)
  • A Fresh Pineapple 
  • Little Green Onion, Onion and Carrots 
  • 2 Tsp Curry Power
  • A Egg (beaten)
  • 6 Tsp Oil for Stir Fried and Separate the rice
  • 3 Tsp Coconut Milk
  • 1 Tsp Salt
  • 0.5 Tsp Sugar
Step#1
Add little oil ( up to 1 Tsp) to the rice and use a spoon or your finger to separate the rice. Set aside.
Step#2
Divides the pineapple as two and takes the pineapple out from the shell. sliced the pineapple as little square. Set aside.
Step#3
Place the little pineapple squares around the pan over medium heat until the pineapple squares becomes dry and place aside.
Step#4
Swirls 5 tsp oil around the pan over medium heat. Add the beaten egg, wait one minutes and stirs the egg then add the green onion, onion and carrots then keep stirring. 
Step#5
Add the rice and keep stirs it until all the rice is separated. Add the curry power, coconut milk, salt and sugar then keep stirs it until all ingredients are mixed together. (If the rice is too dry, you can add little water; if the rice is too wet, just keep stirring it until the rice becomes dry.)  
Step#6
Add the little pineapple squares and keep stir it until the pineapple squares are evenly mixed into the fried rice. Then place the pineapple fried rice into the pineapple shell.
Thai style Shrimp Cake
Ingredient:

  • Two Cups of Plain Flour and 0.5 cups of water
  • 250g shrimp ( shelled, washed and roughly chopped)
  • 1 Tsp sesame oil 
  • little salt
  • Two Cups of oil
  • Lemon for decoration
Step#1
Blend the chopped shrimp, sesame oil and little salt together until it feels sticky and place aside.
Step#2
Mixed the two cups of plain flour and 0.5 cups of water together together and blend it until it is not sticky. 
Step#3
Separate the dough as two portions and use the roller pin to rolls the doughs as two sheets of circle dough.
Step#4
Places one sheet of circle dough on the table and evenly spreads the shrimp on the dough then places the other sheet of circle dough on the top of the shrimp.
Step#5
Put two cups of oil on the pan over medium heat.
Step#6
Put the shrimp cake from Step#4 into the pan and fried it for 5 minutes. Put the shrimp cake on the tray and places the lemon on the shrimp cake as decoration.

PS. You can use the sauce you want. I chose to use the thai sweet chili sauce from supermarket.
